Jon received his doctorate in human nutrition from Michigan State University for his work focusing on diet and immune function and completed his post-doctoral fellowship studying the role of gut microbiota in immune development. His research has been published in several top-tier journals including the Journal of Nutrition and Journal of Immunology. As the senior director of nutrition and scientific affairs at Simply Good Foods, Jon is involved in conducting research, creating new product innovations, creating continuing education courses, and establishing relationships with healthcare professionals.
