I lead the Welsh Government Future Foods Programme in Aberystwyth University and established the Well-being and Health Assessment Research Unit (WARU) to carry out food intervention trials investigating food functionality. My team pioneered the development of metabolomics for compositional analysis foods and have developed a bespoke laboratory to support nutritional quality analysis of food, including an in-vitro facility to mimic the human digestive system. Analytical skills including vitamin profiling, protein digestibility assay and lipid/fatty acid profiling food bioactive discovery/validation have been used in a range of projects collaborative with industry aimed at improving the healthiness of new food & drink products.
